Fredericksburgers invented chicken-fried steak
A recipe called “A Good Steak” was submitted to the Fredericksburg PTA’s first edition cookbook in 1916 by Mrs. Frank Stein, the former Agnes Pfeiffer. Agnes was the oldest of nine children born to August and Wilhelmine Pfeiffer of Boerne. She and her husband, Frank, had four school-aged children then. Her recipe would later be renamed Chicken-Fried Steak in the PTA’s reprints between 1971 and 1982, but in the 1996 Commemorative Edition, it reverted back to its original name.
